Software tools have been developed to “build” representative time-temperature profiles representing the foodrncold chain (Cold Chain Predictor Software: CCP) and quantify the quality of refrigerated food products atrndifferent stages of the cold chain (Quality, Energy and Environmental Assessment Tool software: QEEAT).rnThe two software tools have been developed in the framework of FRISBEE Project (www.frisbee-project.eu)rnand are designed to use cold chain information and data that are available in the publically available ColdrnChain Database (www.frisbee-project.eu/coldchaindb). The objective of this work was to validate thernapplication of the CCP software in combination with QEEAT software using as a case study vacuum packedrncooked ham.
