The possibility of detection, control and identification of pathogenic bacteriums on a surface of meat products is researched with the help of a fluorescent method . The feature of a luminescent method excreting him among other objective tool methods is - analysis of a product effect remotely, without sample destruction on the basis of change of his luminescent spectrums.
