In this paper the flour produced through Milling Factory Wugong Shaanxi have been as material, special used flours purchased in aborad and international market have been as control, testing flour from Milling Factory Wugong ordinary indexes and farinograms and extensograms and fermentograms, evaluated the bread weight and volume and sense indexes and the noodle cooking quality, put forward utilization value of this flours, provided the theoretical and technological processing basis for developing special using flours, specially made a good used for instant noodel, in flour enterprises.
