Cereal Germ Proteins: Isolation Functional and Nutritive Properties

The advantageous nutritive characteristics of cereal germs are well known. It is generally accepted that the cereal germs are good sources of proteins, edible oils, vitamins and mineals (1), although it must be also noted that some of germs contain antinutritive factors (e.g. natural enzyme inhibitors, hemoglutinins etc.).
