The present invention relates to a method for producing rice for gimbap and to gimbap using the rice, and more particularly to the steps of mincing basic ingredients including pickled radish, preparing rice, and preparing the minced basic ingredients and the prepared rice. It characterized in that it comprises the steps of mixing, forming the mixed rice into a cylindrical shape using plastic food for food, and rapidly cooling the cylindrical rice. According to the present invention, there are advantages in that instant production is easy and the flavor is excellent. In addition, there is an advantage of blocking the transfer of moisture between the ingredients constituting the gimbap, so that the original taste of the ingredients can be maintained for a long period of time.
