The present invention relates to a method of manufacturing rice for gimbap and gimbap using the rice, and more particularly, a step of chopping a basic ingredient including pickled radish, preparing rice, and preparing the chopped basic ingredient and the prepared rice. It characterized in that it comprises the step of mixing, the step of molding the mixed rice into a cylindrical shape using plastic paper for food, and the step of quenching the cylindrical rice. According to the present invention, there is an advantage in that instant production is easy and flavor is excellent. In addition, there is an advantage in that moisture transfer between the ingredients constituting the kimbap is blocked, so that the unique taste of the ingredients can be maintained for a long period of time.
