PROBLEM TO BE SOLVED: To provide a method for producing a chicory chip and powder having less bitterness by processing a straight root of a chicory plant, and a method for producing a chicory straight root with less bitterness. SOLUTION: This is a method for obtaining a food product with reduced bitterness, in which (i) chicory straight roots are heat-treated at a temperature of 110 to 212 degrees Celsius, and (ii) chicory straight roots are dried after the heat treatment. It is a method including producing chicory root chips, (iii) milling chicory root chips to produce chicory powder, and (iv) producing food products from chicory powder. [Selection diagram] Fig. 1
