To provide a method for easily and stably producing blonde chocolate.SOLUTION: A method for producing blonde chocolate using at least cacao butter, sugar and protein as raw materials, includes a step of mixing the raw materials to produce a chocolate dough, a browning step of heating the chocolate dough containing at least the sugar and the protein at 120°C or higher and 300°C or lower to brown the chocolate dough, an atomizing step of crushing the chocolate dough into fine particles after adding 10 wt.% or more of the cacao butter, and a step of subjecting the chocolate dough to conching and then to tempering.SELECTED DRAWING: None
