Preserving flour &c.-Flour and grits from cereals are sterilized and improved by drying at about 45‹ C. in a vacuum, heating the material to 80‹ C., and then suddenly cooling, the vacuum being maintained throughout. The process is carried out in a rotary drum, or in a stationary jacketed container with stirring apparatus, or on an enclosed plate drier. Successive containers in air-tight communication are preferably employed for the various steps.
