In the conversion, i.e. oxidation, of green tea, that is to say, fresh or fired green leaf tea or extracts thereof, to black tea, the green tea is treated with a waterimmiscible organic solvent, such as chloroform, petroleum ether, methylene chloride, dichloroethylene, trichloroethylene, benzene, hexane, or iso-octane, to reduce the time required for conversion. Water-soluble solids may be extracted either during or after the treatment, for example with water or preferably a mixture of acetone and water.
