PICT:1094145/C3/1 In a process for extracting and separating starch and gluten from a dough of wheat flour, wherein a wash liquid entrains the starch and carries it out of a treatment zone while gluten forms into lumps in the treatment zone, the gluten is caught and pushed through the zone, whereby small gluten particles or lumps stick to or are absorbed by the caught gluten lumps, and the wash liquid is caused to discharge from the treatment zone without accumulating therein. In one embodiment (Fig. 1) dough is introduced at 5 into one end of a trough 3 from which gluten is discharged at 7. Rotating shaft 1 bears various means 2 for working and conveying the dough transversely and longitudinally of the wholly or partly perforated bottom of trough 3, which is also provided with pipes 8-11, fed from pipes 12 through which wash liquid, e.g. water or starch milk, is sprayed on to the dough. As the starch is carried away through the perforated sections 14, the remaining lumps of gluten are squeezed and spread between sabre-like members 21 and the trough bottom, and are repeatedly lifted out of the trough by scrapers 18 and returned thereto. Small gluten particles are collected by the lumps during their passage towards exit 7. The wash liquid is continually withdrawn via collectors 30 and pumps 29 from perforated bottom portions 14, and may be recycled to return small gluten particles to the treatment zone.
