Crushed, shelled filberts may be comminuted in the presence of water and optionally of powdered glass to rupture the cells, and the aqueous extract containing the enzyme filtered off. The extract may be used to ripen cheese; to improve its efficiency for this process, Saccharomyces cerevisiae may be added to the comminuted nuts.
