The digestability of albumin-rich animal or vegetable products e.g. broken up sunflower seeds or soyabeans, is improved by adding to the crude powdered products cpds. which are reactive towards acids e.g. monocalcium phosphate or NaHSO4, and towards base, e.g. di- or tri-sodium phosphate or Na2CO3, together with enough water to form a firm mixture. This is then heat treated under enough pressure to break up the cellular structure of the albumin-rich products. The solid product is then opt. crushed and dried by known methods.
