In the countercurrent extraction of soluble matter from ground roasted coffee-beans, the insoluble part of which comprises colloidal particles, and in which the material to be extracted moves transversely to the flow of the extraction medium, the extract is separated from the beans by means of a filter positioned in an extraction chamber, which filter allows a substantial part of the colloid to pass through, the ground beans being introduced into the chamber in the vicinity of the filter. A suitable filter is shown in Fig. 1, the filter 1 being provided with slits 2 and also with scrapers 5 and knives 7 (Fig. 2, not shown) both rotatable during the extraction operation.
