Fermentation of aldose to gluconic acid, involves adding part of aldose to fermentation medium, partly fermenting, adding remaining aldose and fermenting
Deep fermentation of glucose in a nutrient medium contg. e.g. Aspergillus niger is improved by first introducing into the medium only a part of glucose to effect its fermentation at a pH of 5-7; then adding the remaining glucose and allowing the pH to drop below 5. The total glucose is added in an amt. of 50-75% (w.r.t. the fermentation medium). Thus the process can be carried out in highly concentrated solns., whereby the economy is improved. High purity glucose acid is obtained.
