The starch content, approx 80% and the vitamins and minerals are washed out of the untreated esp. wheaten, flour to leave the gluten residue of approx 20%. Finely divided, esp. powdered, material such as straw, other plant derivatives, wood, synthetic or other carbohydrate free material which is tasteless and free of tannin (i.e. neutral and inert in the intestines) is then mixed in with the gluten residue in the same proportions as the starch which has been leached out, this mixing process being carried out with the gluten either wet or dried and finely milled. The composite material is then used for bread, biscuits or the like after the minerals and vitamins have been re-added to the powder mixture. Low dietary food which retains adequate roughage for good health and is not unduly unpalatable.
