Bones are automatically removed from legs of poultry, after they have been heated, by a machine which comprises a conveyor belt which brings a leg towards two rollers with vertical axes; these can be turned aside elastically. The leg, with the claws foremost, is carried towards the rollers through a centering device consisting of two blades; the bone meets an assembly of shears whose planes converge towards the axis of the bone. each shear consists of two toothed discs rotated in opposite directions. Incurved deflectors push the meat away from the shears and it falls from the end of the conveyor; the bone continues its advance between the two rollers and is then evacuated. The process is effected more rapidly, if not more perfectly, by the automatic machine than by a manual boning operation.
