Machine for automatically tying sausages, e.g. salami, in skins by means of knots in string comprises (a) an orifice through which the sausage skin passes, (b) a tool designed to tie the skin at a specific spacing corresp. to that of the ligatures in such a way as to leave this spacing between the sausages and pre-arranged at the ligatures, (c) a spool or bobbin carrying a reserve of twine and (d) devices for diplacing and guiding the twine and this pool or bobbin round the periphery of the compressed skin in such a was as to displace the twine along a polygonal path with the final introduction of the bobbin into this polygon and with successive pulling of the twine to bring about the rotation around the axis of the bobbin so as to determine the formation of the knot round the periphery of the skin and from the string. The machine permits completely automatic tying and knotting so that output is considerably increased relative to the normal manual tying.
