An instant powder for the prepn. of grape and apple must is prepd. by joint drying, pref. in a vacuum and at a gradually dropping temp., of pre-thickened fruit juice and active yeast. The fruit juice is pref. mixed wit 20-80% of a carrier and with a yeast of 20% dry substance so that the concn. of the fruit juice/carrier medium surrounding the yeast is 60% pref. (70%) and allows no fermentation. This produces an effervescent must which contains many vitamins and was only obtainable in wine and apple growing districts for a few weeks every year. It serves the problem of drying must and active yeast.
