Instant-soluble fruit juice-based dry solids (A) are prepd. by pre-concentrating fruit-juice together with beer wort to =55 (=65)% dry solids content and vacuum-drying, is used in food-industry e.g. as basic ingredients or additives for drinks or food, but esp. for ready-to-use foods, e.g. dry soup- and sauces, pudding- and cold dessert powders. The additional protein- and protein decompsn. prod.-contg. beer wort helps to achieve a stable foam structure in vacuum drying. Beer wort also introduces vitamins of B-complex and essential amino-acids, thus improving nutritional value of solids. Malt components of beer wort impart a pleasant, "rounded-off" taste.
