A homogeneous aq. dispersion of the degreased soya grains is prepd., solids are removed and soln. is subject to reverse osmosis. The protein obtained thus is =75 wt. % water-soluble and denatured 25%, gives an emulsion of =200ml. soya oil per g. protein, a viscosity in 2 wt. % aq. soln. of ca 12.0 cP at 30 degrees C and at 7 wt. % aq soln. does not gel when at 65 degrees C for =15 min.
