High protein foodstuff is produced from cereal and as barley, maize, rice, by treating the cereal with water and then exposing it to air under conditions of temp. time, aeration and moisture to initiate starch and protein degradation into sugars and amino acids, i.e. to form pregerminated cereal, inoculating the pregerminated cereal with a microorganism comprising a protein rich yeast of the Tonulopsis type, and subjecting the medium to conditions favouring maximum growth and multiplication of the yeast, which is terminated by heating when the desired protein level is reached. The prod. contains 18-25% protein and is used for feeding cattle without producing allergic effects.
