cauliflower is blanched for 6-8 mins. in boiling water at 120 degrees C contg. about 70 g coarse salt/kg cauliflower, after which the cauliflower is draned and de-stumped. A sauce is prepd. from pref. 45g/kg cauliflower of peanut oil cooked with 30g/kg cauliflower of minced garlic, which is sepd. after 2 mins. To the peanut oil can equal quantity of oil is added with 70g/kg cauliflower of butter. Once the butter has melted the cauliflower is added to the sauce and stirred gently for about 8 mins. Separately, a quantity of paste equal to about 2/3rd of the cauliflower weight, is half-cooked for 12 mins. at 120 degrees C in boiling water contg. 60g/kg cauliflower of coarse salt. The drained paste is added to the cauliflower plus sauce and gently mixed for 4 mins. The product is then charged to a jar, sterilised at 135 degrees C and then sealed and cooled. A preserve can also be prepd. by the above process. After sterilisation and storage, the novel product is perfectly cooked and only requires heating on a water bath in the jar for eating. The product has an agreeable taste which does not deteriorate in storage.
