A process for preserving green plants and vegetables by lactic acidification with the aid of bacteria added before storing in a silo comprises adding with the lactic acid producing bacteria a factor for breaking down higher glucides, partic. cellulose and starch, into fermentable sugars which can be used by the bacteria producing the lactic fermentation. The process is used for preserving food for animals using all kinds of plants including those difficult to treat such as cabbage, luceme and beetroot. The process avoids any butyric fermentation and improves the nutritive value of the food product.
