In an evaporator comprising a casing which contains a series of flash chambers, connected by rectangular flow outlets in transverse baffles, there is disposed in each chamber, across the flowpath of liquid through the chamber, a transversely-extending curved dam 10 which rises from the floor of the chamber to a level 5 cm. to 10 cm. higher than the upper edge of the outlet of the chamber. The dam is shaped, in vertical section, like half of a sine curve, and produces turbulence of the liquid, thereby promoting the escape of vapour. The evaporator comprises a central evaporation zone, separated by two vertical longitudinal baffles from two lateral condensation zones each of which contains cooling tubes 5. The apparatus may be used for the desalination of sea water.
