Prodn. of a detoxified rapeseed protein concentrate is carried out by (a) incubating an aq. slurry of coarse-ground rapeseed with myrosinase and ascorbic acid to hydrolyse glucose inolates; (b) extracting the product with a mixt. of H2O and an organic solvent; (c) separating a protein-contg. residue from the solvent phase; and (d) during the residue to produce a protein concentrate. The starting material is pref. deoiled coarse-ground rapeseed which has been roasted at 60-100 degrees C (esp. 60-75 degrees C) for 1-30 min. The process gives products contg. 0.009% 5-vinyl-oxazolidine-2-thione (VO) and 0.004% 3-butenyl isothiocyanate (ITC), suitable for use in foodstuffs and animal feeds.
