During the prim. fermentation, strained must is drawn off at the base of the fermentation vessel and returned in the upper part of the vessel to percolate through the head of grapes retained in the vessel. This recycling can be continuous or intermittent. The winemaking vessel is pref. vertical cylindrical and subdivided by two spaced screening grills into three super-imposed chambers. A batch of crushed grapes is piped into the intermediate chamber.
