Shapes of dough or marzipan are produced by guiding the paste in a layer over a feed roll which is faced by a moulding roll. The desired shapes are engraved in negative form on the periphery of the latter. A cutter blade skims off the shapes from the periphery of the feed roll. Both the shell and the countersunk shapes are given a rough surface by sandblasting. The roughened surfaces result in point contact and prevent any sticking of the dough to the moulding roll. Manual powdering of the rolls is not necessary any more and imperfect shapes have been eliminated.
