A new device for cutting or marking dough in the manufacture of e.g. bread rolls consists of (a) a longitudinally movable support surface for receiving the raw dough shapes in parallel rows, (b) a transverse shaft located above this surface and fitted with a number of cutting discs which rotates so that they operate in the direction of motion of the support surface, each disc being located above a row of dough shapes so that it cuts the shapes longitudinally, (c) a shaft parallel to and behind the cutting disc shaft and fitted with freely rotating rollers for holding the dough shapes in place, and (d) pairs of contra-rotating rollers which operate in the direction of motion of the support surface and which press in the sides of the dough shapes after they have been cut by the cutting discs. The support surface consists of a moving conveyor belt on which trays may be placed, and preferably contains parallel ridges or depressions for maintaining the orientation of the dough shapes. USE/ADVANTAGE - Used in bakeries for producing e.g. bread rolls in which a required form of crust is achieved by means of a knife cut in the upper surface of the raw dough shape before baking. The dough shapes are prepared in a continuous automatic process whose results are very close to those of the traditional manual procedure.
