PREPARATION OF JAPANESE CRACKER WITH LETTER AND PATTERN

PURPOSE:To stamp (emboss) letters and patterns on a sheet dough and transfer a color changing solution capable of changing the color by heat to the sheet dough, by applying the color changing solution to a stamping (embossing) roll with stamping (embossing) dies, and passing the sheet dought through the stamping (embossing) dies. CONSTITUTION:A sheet dough 3 is passed through a stamping (embossing) roll 1 and supporting roll 1''. The surface of the stamping (embossing) roll 1 is provided with protruded stamping (embossing) dies 1' for stamping letters and patterns, and a color changing solution 8 capable of changing color by heat, e.g. molasses or equeous thick malt sirup, fed into a hopper 7 is applied to the surface of the stamping (embossing) roll 1 by a coating roll 6. Letters or patterns are stamped (embossed) on the sheet dough 3, and the color changing solution 8 is applied to the surface thereof. The sheet dough 3 is then patterned by a pattern roll 2, dried, baked and finished.
