Procedure of obtaining, by ultrafiltration lactomero, a product enriched in a-lactalbumin. It consists of the following Stages: 1.) a First ultrafiltration with Membranes of an Upper Threshold to 5000, being made on a Gross lactomero, at least at pH 6.3. 2.A Second ultrafiltration with membrane capable of Retaining the a-lactalbumin with a Power lower than 5000. The employee has not undergone Heat Treatment lactomero Prior (pasteurization). PH regulation is made by reaction of Basic Compounds, such as Sodium Hydroxide, POTASSIUM CARBONATE, sodium, potassium, or similar.
