The oven has a hearth plate beneath an arch. A gap is left between each longitudinal edge of the hearth plate and its adjacent sidewall so that there is communication between the space above and the space below the hearth plate. The space below the hearth plate contains a gas heater with rows of burner nozzles directed towards the plate. The outer casing of the oven is provided with downward skirt extensions to front, rear and sidewalls. The skirts extend below the level of the gas burners. Pref. the longitudinal edges of the hearth plate have upward flanges to prevent embers from the hearth plate falling through the side gaps. An extraction hood pref. extends over the top of the oven door to carry away fumes and smoke. Now that supplementary gas heating has been added, the oven can be used continuously without periodically clearing the hearth plate of prod. for reheating with freshly spread embers.
