A multi-purpose, open fire oven for baking pizzas, open tarts, etc. The oven is of the type which has a hot plate chamber beneath the furnace space. The base of the oven chamber is a fixed hearth plate on the top of the furnace space. The front-to-rear length of the hearth plate is less than the corresp. length of the oven, leaving a gap at the rear of the hearth through which hot flue gases rise from furnace to chimney. The top of the oven chamber is formed by a canopy which is adjustable between an upper, advanced position and a lower, retracted position. In the upper position, the canopy completes a total enclosure of the oven space which excludes direct contact between prod. and hot flue gases. In its lower position, the canopy combines with the hearth plate to present a vol. open to hot flue gases which have first been deflected by the rear, underside of the canopy. The canopy is pref. linked to the hearth plate by a parallel motion of pivotally connected struts. Used for baking and browning open tarts, pizzas etc., partic. for restaurants. Cooking, browning and hot plate storage are all carried out in the same oven. A high output of "home-cooked" quality prod. is obtainable from a single oven which takes up little space and requires only low capital investment.
