The so-called dietary fibres, such as cellulose, hemicellulose and lignin, play an important role in connection with human diet inasmuch as they stimulate the peristaltic motion, which generally avoids poor bowel movement (obstipation) and its sequences. A biscuit which contains spent brewers' grains and shaped in the form of a pancake or pretzel, has this advantage. Such a pretzel is composed of a number of the following substances: flour, bleached flour, margarine, brewer's yeast, water, salt, ingredients such as garlic, onions, cheese, glarner ziger cheese, curry powder, paprika and caraway. To prepare such a pretzel, at least yeast is boiled in margarine, and this cooking process is subsequently continued with the addition of at least spent brewers' grains and water. The mixture is then cooled, whereupon flour is added and the dough is kneaded and allowed to stand for several hours at refrigerator temperature. It is then either shaped into pretzels or stored at deep-freeze temperature until further processing.
