PURPOSE:To prepare straight Japanese SAKE (brewed rice wine) preservable stably keeping the original taste and flavor without using heat-treatment of the SAKE, by treating a straight SAKE with a specific ultrafiltration membrane. CONSTITUTION:A straight Japanese SAKE preservable without deterioration causing the undesirable sweetness, moldy smell, etc., by filtering a straight SAKE with a polysulfone ultrafiltration membrane having a critical molecular weight of 10,000-20,000 under a nitrogen pressure of about 4kg/cm2.
