Microbial prepn. of a concentrate of alimentary acids is effected by aerobic fermentation under emersion or submersion conditions using as nutritive substrate juices of fruits or vegetables, obtd. by pressing or by extracting and/or from rediluted concn. prods. contg. pref. 10-20 wt.% solids, or raw materials and secondary fruit and vegetable prods., ground or liquefied by mechanical, thermal and/or enzymatic processes, and using as moulds micro-organisms, pref. of the Aspergillus niger type or yeasts pref. of the Candida type.
