The invention relates to a method for modifying the physical and biochemical characteristics of the blood of animals after slaughter or of the serum or plasma thereof after separation, characterized in that it consists in heating the blood in the liquid state before coagulation or its plasma or serum after separation, the heating being carried out in bulk by applying to said mass of blood or plasma or serum slow and continuous stirring, the heat treatment being continued until a temperature corresponding substantially to the temperature d boiling for which the blood is then present in the form of a stable and slightly moist lumpy phase, with substantially total disappearance of any liquid phase, with the exception of a small liquid rendering possibly incorporated into the liquid blood of a subsequent operation of the same nature. The blood of animals after slaughter, the physical and bio-chemical characteristics of which have been modified by application of the heat treatment defined above, constitutes a new industrial product and is characterized in that it is in the form of a phase or structure stable and slightly moist lumpy, similar in appearance to that of coffee grounds, dark brown in color as regards the blood proper with substantially complete disappearance of all liquid phase, the lumpy structure consisting of an aggregate of irregularly shaped nodules isolated or slightly adherent to each other, of millimeter size, themselves constituted by an agglomeration of elementary granules of spheroidal appearance having a diameter of the order of 1 to 5 microns.
