This elderberry beverage is prepd. by the enzymetic treatment. This metod is based on the fact that the natural flavor, nutritive value and stability of the antocyanocide pigment of elderberry juice is maintained at pH3. Elderberries are collected, washed and crushed. Saccharification of the crushings is accomplished by enzyme complex fermentation at 60C, pH 4.5 for 72hrs. This fermented soln. is adjusted to pH 3.0 by the addn. of vinegar. The acid-treated soln. is treated by an ultrasonic extraction device at 2000 Kc/sec, 7000atms. By compression and filteration, the elderberry juice is obtained. The juice sterilized by ultrasonication.
