摘要

PURPOSE:To obtain in high yield a diglyceride, by blending a specific fatty acid or an ester of it with a lower alcohol with a specified amount of glycerin, dehydrating the blend and treating the blend with an alkali lipase of microorganism. CONSTITUTION:1mol 4-22C saturated or unsaturated fatty acid or ester of it with 1-3C lower alcohol is blended with 0.5-1.0mol glycerin, dehydrated in the presence or absence of an organic solvent (except primary alcohol solvent) substantially without adding water and treated with an alkali lipase of microorganism (preferably lipase produced by a bacterium belonging to the genus Achromobacter or Alclaligenes). Preferably the blend is dehydrated into =1 water content.
