Process for the production of ethanol and/or baker's yeast

In the process, a substrate composed of sugar-containing substances and of a nutrient solution is fermented with a yeast of the genus Saccharomyces at 20 to 40 DEG C, and subsequently ethanol and/or the baker's yeast are separated out of the fermented substrate. It is provided in this process that the mixture composed of the substrate and the yeast is sterilised by circulation in a homogenising machine.
