There is added to the starting substance, either a calcium-complexing agent if the starting material is a milk from mammals, or an agent polymerising all the caseins if the starting material is an aqueous solution of caseinate, and the mixture is cooled to 0 DEG C-7 DEG C. The substance thus obtained is then subjected to microfiltration on an inorganic membrane, under tangential flow, the circulation rate of the said substance being of the order of 4.5 m/s to 10 m/s, in order to obtain, on the one hand, the microfiltrate consisting of the beta -casein-enriched material and, on the other hand, a microfiltration retentate as co-product. This can be followed by ultrafiltration, then either by a chromatographic purification followed by drying, or by dialysis followed by drying. The products obtained ( beta -casein-enriched material and beta -casein-depleted coproduct) have nutritional applications in the agri-foodstuffs sector (milk and cheese, dietetic foods and pharmaceutical industries). As for the beta -casein-enriched material, it can also be used for preparing peptides with direct or indirect physiological activity, such as beta -casomorphine. IMAGE
