Method and device for cutting a piece of meat

In order to cut a piece of meat into slices of uniform thickness which are aligned parallel to the longitudinal direction of the said piece of meat, it is proposed that the piece of meat be inserted into a magazine (1) having a side wall (3) which can be displaced perpendicularly to its longitudinal axis. Pressure-dependent displacement of the side wall (3) causes the piece of meat to be compacted. Displacement of the side wall (3) is also path-dependent, however, in that the vertical distance between the side wall (3) and a side wall (2) which is situated opposite the latter corresponds to a whole multiple of the distance between cutting gratings (4). The latter are distributed across the cross-section of an open end of the magazine (1) and forcibly divide the piece of meat pressed out through the open end of the magazine (1) into slices of uniform thickness, without leaving a remainder.
