The invention relates to a process for baking in an oven and for preserving a cereal-based food product, consisting in: - partially baking a dough formed by kneading cereal flour, a leavening agent and water placed in a container; - applying before the end of the baking, and preferably at 3 to 4/5 of the latter, a lid to close the said container; - completing the baking of the dough in the closed container; - leaving to cool to room temperature in order to block the lid. Application: to the manufacture of bread and cakes with improved preservation.
