Organic acids such as citric acid, maleic acid, oxalic acid and tartaric acid, can be recovered from aqueous solutions or their fermentation liquors by pretreating the acid liquor before extraction with active charcoal granules and extracting the pretreated acid solution with a solvent mixture which is not miscible with water and consists of phosphoryl-containing extracting agent and a suitable diluent which is not miscible with water.
