Baking room ventilation system has air supply duct leading from the ventilation fan unit to an air supply distributor above the dough prepn area, and an air return duct which draws air from a hood above the region of the ovens and returns it to the fan unit. The distributor comprises arrangement of grilles and allows the air to fall vertically over the entire dough prepn area. A branch from the air supply duct delivers air to a distributor above the baking oven and provides a cool air curtain extending at least across the oven access and loading area. The fan unit has supply and extract fans, a heat exchanger between the supply and extract air ducts, and a device for recirculating part of the extract air. USE/ADVANTAGE - Used in baking rooms incorporating a dough-prepn. area and baking oven(s). A constant good working temp. is maintained in the baking room, and the quality of the dough is preserved and the formation of clouds of vapour is avoided.
