PURPOSE:To effectively recover extraction residue of maize protein and to improve effective use by treating a specific by product with a raw protein digesting enzyme. CONSTITUTION:Corn gluten feed and/or fine fiber (A) is obtained as a by product from a process of manufacturing starch from maize grain by wet treatment method. Then the component A is adjusted to 5-20w/v% solid content concentration and pH4-6 to give a suspension (B) of the component A. On the other hand, a raw starch digesting enzyme (C) or the component C and one or more enzymes (D) selected from alpha-amylase, alpha-1,6-glucosidase and oligo-1,6-glucosidase are used together to give an enzyme (F). Then the component B is mixed with the component C or F, reacted at 45-65 deg.C, starch physically bonded and/or attached to the component A is solubilized and recovered as a water soluble saccharide to treat the maize starch extraction residue.
