PURPOSE:To obtain the titled compound which is useful as a food raw material, etc., owing to excellent stability and is difficult to be produced in a mass by conventional method, on an industrial scale at a low cost, by treating a substrate consisting of starch and its decomposition product, etc., with cyclodextrin synthetase. CONSTITUTION:A substrate consisting of starch (e.g. potato starch) and decomposed starch produced by decomposing the starch with heat-resistant alpha-amylase, etc., is added with a cyclodextrin synthetase and made to react with each other at pH 6.0 and 40 deg.C for 2 days. After deactivating the enzyme, the product is reacted with glucoamylase and/or yeast to obtain a mixture of neotrehalose and centose. Neotrehalose and centose can be produced by subjecting the sugar mixture to column chromatography to separate both components.
