PURPOSE:To provide specified coloring of periderms by injecting ethylene gas when flesh temperature of bananas attains the set temperature in a ripening chamber, ventilating air in the chamber when the temperature attains fermentation starting temperature of the bananas and further ventilating the chamber at a certain amount or more of generated CO2 gas. CONSTITUTION:When flesh temperature of bananas attains the preset temperature based on an output of a flesh temperature sensor 22 placed in a chamber 10 for ripening the bananas, ethylene gas is injected into the chamber for a prescribed time. Furthermore, when the above-mentioned flesh temperature is increased to attain fermentation starting temperature of the bananas, air in the chamber is ventilated after the lapse of a prescribed time. Ventilation is then repeatedly carried out plural times at a prescribed interval or ventilation for a prescribed time is performed plural times when the preset CO2 gas concentration is attained based on an output of a CO2 gas sensor 20. As a result, coloring of the bananas is homogenized to increase sugar content and further enable after ripening processing of the bananas having soft flesh and hard periderm.
