PURPOSE:To separate the title unsaturated fatty acid ester by a method wherein fractions having the same number of carbon atoms, separated from an unsaturated fatty acid ester mixture derived from oil or fat, are introduced into adsorption and separation equipment of simulated moving bed type containing a specified adsorbent and desorbing agent. CONSTITUTION:Fractions having the same number of carbon atoms, separated from an unsaturated fatty acid ester mixture derived from oil or fat, are introduced into adsorption and separation equipment of simulated moving bed type containing both an adsorbent comprising a faujasite type zeolite substituted by group IA metal cations and a desorbing agent of formula I wherein R1 and R2 are each H or lower alkyl or formula II wherein R3 and R4 are each lower alkyl, where they are brought into contact with the adsorbent and the desorbing agent. A highly unsaturated fatty acid ester having double bonds at least at the omega3 and omega6 positions (e.g. gamma-linolenic acid ester) is separated from the adsorption and separation equipment.
