Green tomatoes are preserved in sugar-syrup with no added chemicals. Washed green tomatoes are peeled and if over 30 mm diameter, cut into smaller pieces, steamed over an acetic-acid contg. bath until glassy. A syrup which contains at least 50% sugar is added at 80 deg.C, together with customary fruit flavouring (1.5%). The mixt. is put into containers (jars, boxes) and made airtight. Depending on the state of sterility of the prods. a second steaming may be necessary
